The shadberry is a tall tree (growing up to six meters). Its berries are a rich purple with a hint of pink, vaguely reminiscent of currants. The berries are sweet and non-acidic in taste. A single tree can yield up to 30 kilograms of fruit. Harvesting takes place in the second ten days of July. The berries ripen unevenly. This unique fruit is ideal for making drinks. How to make shadberry compote?
Features of preparing chokeberry compote
Due to the taste of the berries, when preparing compote, it is necessary to supplement them with sour fruits or special additives.
The fruit contains trace amounts of tannins, making it tasteless. To enhance the flavor of the drink, add fruits with sufficient acidity. For example:
- citrus;
- citric acid;
- vinegar;
- astringent berries.
The drink can be preserved using sterilization, but it can also be sealed without sterilization. In this case, use more berries and sugar and less water. The concentrated juice must be diluted before serving.
To increase the shelf life, the following rules should be followed:
- compliance with the methodology;
- recipes;
- proper preparation of berries: washing and selection;
- sterilization of jars and lids.

Selecting and preparing the main ingredient
Berries should be picked after they've ripened. They should retain their firmness. It's recommended to use unripe fruit when preserving.
Before juicing, the fruit must be sorted. Remove any overripe or bruised ones. After careful selection, rinse and dry.
