Among all preserves, gooseberry delicacies are called "royal" due to their unrivaled taste. Moreover, the fruit is rich in pectin, making preparing these winter treats a breeze. The green or burgundy color of the berries indicates their rich nutritional value. Jam made from the delicious sweet and sour gooseberry preserves both its nutritional value and flavor.
Peculiarities of making jam at home
Even a novice cook can prepare a healthy delicacy if they take the following points into account:
- The berries contain seeds that must be removed. First, the fruit is blanched, then pureed and pressed through a sieve.
- Due to the abundance of pectin, there is no need to add additional gelling ingredients to the jam.
- To determine the treat's readiness, drop some jam onto a plate. If the treat has retained its shape and hasn't spread, remove the dish from the heat and roll it up.
- Avoid using aluminum utensils for cooking. The acid in the berries reacts with aluminum to form harmful compounds. It's better to use a wide enameled pan or a stainless steel saucepan.
- Jars must be sterilized using steam, an oven, or a microwave. Metal lids should be boiled.

How to choose gooseberries for jam
The basis of jam is carefully selected ingredients. Ripe, undamaged grapes are selected for the preparation.
Jam is made from different gooseberry varieties, which determine the color and consistency of the treat. For a red tint, choose Grushenka and Senator. Green berries are best with Malachite or Rodnik berries. Yellow berries are best with Yubileiny and Yantarny berries. And a black tint can be achieved with Chernomor and Prune varieties.

Preparing berries
Rinse the berries, drain in a colander, and pat dry. Remove the stems and stalks from each berry. For juiciness, pierce the gooseberries with a toothpick.
You can speed up the process of preparing the fruit by arming yourself with manicure scissors.
