In this case, tomatoes must meet the following requirements:
- To ensure the vegetables fit easily through the jar, they shouldn't be too large. Medium-sized fruits are best;
- dense skin and pulp with small seeds;
- maximum ability to resist pathogenic microorganisms;
- high carbohydrate content;
- For canning, tomatoes are better suited because they can remain fresh for a long time.
If you have your own garden, it's best to grow the fruits suitable for canning separately. This way, you can monitor their ripening and the overall condition of the plant.

Prepare the main ingredients
Firm, small, medium-ripe tomatoes are best for canning. These tomatoes fit more easily into a jar, and if you gently shake the jar, you'll have even more room, as the vegetables will pack in tightly.
Once you've selected the vegetables, rinse them thoroughly, dry them, and then use a toothpick to poke a hole through the stem. The hole should be about halfway through the tomato. This is necessary to prevent the tomato from bursting when the boiling marinade is added.
Additionally, you need to ensure you have the remaining ingredients needed for canning. Depending on the dish, these ingredients may vary. The key is to have clean water, tomatoes, honey, garlic, and dill ready in advance.
Delicious recipes for winter preparations
To make the dish original and delicious, you can add various ingredients to the tomatoes to suit your taste, but it's important to remember that they must complement all the other ingredients in the dish. For this purpose, we've already provided several original recipes for achieving the exquisite and piquant flavor of honey tomatoes.
Classic Honey-Marinated Tomatoes
To make honey tomatoes using the classic recipe, you will need the following ingredients:
- one and a half kilograms of tomatoes;
- honey;
- one teaspoon of vinegar;
- sugar (45 grams);
- 2 bay leaves;
- one umbrella of dill;
- a liter of water;
- one clove of garlic;
- a few black peppercorns.

When preparing the jars, first prepare them. Wash them thoroughly and dry them by placing them upside down on a towel. Next, place one clove of garlic, dill, and other prepared spices in the bottom of each jar. Then, add the tomatoes, packing them as compactly as possible.
Now bring the water to a boil and pour it into the jars. Cover the jars and let them sit for no more than 9 minutes. After this time, drain the water. Repeat the same procedure, replacing the water with clean water. To prepare the marinade, dissolve the salt, honey, and granulated sugar in the water, heating the mixture while stirring occasionally. Once it boils, you can begin pouring the liquid into the jars and adding 1 teaspoon of vinegar. The jars are now ready to be sealed with sterile lids.
Next, check the jars for leaks and turn them upside down. Wrap the entire jar in a towel and let it cool for 2 days. This dish can then be used as a main course or as an addition to sauces.
Tomatoes with honey and horseradish
To prepare a snack of tomatoes, honey and horseradish, you will need the following ingredients:
- 100 grams of sugar and salt;
- 3 horseradish leaves;
- 5 liters of water;
- vinegar 9%;
- dill stems or feathers;
- honey (2 spoons);
- tomatoes.

The cooking process is as follows;
- Wash and sterilize the jars for steaming. Soak them and their lids for about 15 minutes.
- The fruits need to be washed well and the stems removed.
- For this recipe, use only whole, firm tomatoes. They will hold their shape much longer. At this stage, peel the garlic and wash the dill thoroughly.
- When the jars have cooled, spices and herbs are placed on their bottom.

- After that, you can begin piling tomatoes up to the edge of the jar. The more vegetables you fit in the jar, the less marinade you'll need.
- Once the tomatoes are safely placed in the jars, begin preparing the marinade. First, pour boiling water over the tomatoes for no more than 20 minutes. Then, pour the water into a container and simmer over low heat. Add honey, sugar, and salt.
- Once the mixture has reached a boil, leave it on the stove for another 7 minutes. Finally, add the vinegar.
- At the final stage, the jars are sealed with airtight lids and wrapped tightly in a towel until completely cool.
With basil
To make honey tomatoes with basil leaves, you will need the following:
- apple cider vinegar;
- sugar and salt;
- pepper;
- honey – 50 grams;
- bay leaf;
- basil and dill;
- 5 cloves of garlic;
- tomatoes.

First, prick the tomatoes with a fork and place them in a jar along with the peppercorns, basil leaves, and dill. Next, prepare the marinade with vinegar, sugar, and salt. Then, fill the jar to the brim. After an hour, drain the liquid, bring it to a boil, and add honey. Now pour the marinade over the tomatoes and seal with sterilized lids.
With onions
To prepare the onion preserves, simply add the onion to the recipe above. Place it in the jar along with the vegetables, bay leaf, and garlic cloves. For 3 liters of preserves, you'll need one medium-sized onion.

Pickled tomatoes with honey and garlic
This appetizer is a favorite among those who enjoy jellied meat, mashed potatoes, and fried meat dishes. To prepare it, take a few cloves of garlic and crush them in a garlic press. This ingredient should be added to the jar of tomatoes only before the final filling, so that it doesn't lose its flavor and is not poured out before preparing the marinade.
Marinated tomatoes with hot peppers
To prepare this dish you need to stock up on the following ingredients:
- 50 grams of honey;
- 3-4 cloves of garlic;
- 1 kilogram of medium-sized tomatoes;
- 2-3 hot peppers;
- granulated sugar and salt (15 grams each);
- apple cider vinegar (70 milligrams).
To prepare, prick the vegetables with a fork and place them in a jar along with a clove of garlic and bay leaves. Now you can begin preparing the marinade. When the mixture comes to a boil, pour it into the container with the tomatoes and let it steep for 60 minutes. Then, pour the marinade back into the pan and bring it back to a boil, remembering to add honey and dissolve it thoroughly in the water. Now you can begin pouring the liquid into the jars and sealing them with sterilized lids.

Tomatoes in honey sauce
For this appetizer, cut the onion into large rings and wash the remaining vegetables. Lightly crush the chopped onion to extract its juices. Prepare the dressing by adding oil, vinegar, and honey. Once ready, let it simmer on the stove for about 5-10 minutes. During this time, place the tomatoes in a jar, mixing them with the onions. Once the jar is filled with vegetables, pour in the prepared honey dressing.
In this state, tomatoes should stand for no more than 10 minutes.
Next, return the water to the original container and bring it to a boil. This process is repeated two more times. After the final filling, the jars can be sealed and wrapped in a towel. Once they have cooled, they can be stored in the cellar until next winter.

- allspice;
- tomatoes;
- spices.
The preparation process is similar to the classic recipe. When preparing the marinade, honey is added last, after which the jars are sealed and stored in a dark place until completely cool.

Honey tomatoes in liter jars
For a liter jar you will need the following ingredients:
- honey;
- 1.5 liters of water;
- 3 medium bay leaves;
- 1 tablespoon of salt;
- 4 spoons of sugar;
- allspice;
- 1 clove of garlic;
- carnation leaf;
- dill;
- vinegar.
As with all other pickles, the tomatoes should be layered with cloves, dill, garlic, and fennel to the very top. Once the marinade is ready, fill the jars to the very top and seal with sterilized lids. Store the marinated mixture in liter-sized jars in any cool, dark place in the house.

Canned cherry tomatoes with honey
To prepare a canning jar for three three-liter jars, you will need the following ingredients:
- Half a glass of granulated sugar, salt and vinegar.
- 3 pieces of hot pepper.
- 4 kilograms of tomatoes.
- Garlic, dill.
- Horseradish.
- 5 liters of clean water.
- Two tablespoons of honey.

Cooking process:
- prepared herbs with spices are distributed into jars;
- cherry tomatoes are carefully placed with spices;
- Next, the vegetables are poured with boiling water, which, after 15 minutes, is poured into a pan to prepare the brine;
- add sugar, honey, salt, and after boiling, vinegar;
- now the brine is poured into clean jars;

- Place horseradish and pepper in a jar with the garlic. Add well-washed cherry tomatoes along with the garlic;
- Afterwards, the marinade must be brought to a boil again and poured over the vegetables in the jars for 15 minutes;
- after this time, the water is drained back and boiled for another 5 minutes;
- At the final stage, vinegar is added to the marinade, after which the jars can be filled with brine and sealed with sterilized lids. The preserves are wrapped in a towel and left to cool for 1-2 days.

Where to store the preparation and what to use it with
Once the jars of tomatoes have cooled completely, they should be placed in a basement or other dark, cool place.
Honey tomatoes can be eaten with a wide variety of dishes, depending on the recipe used.
