Note: It is recommended to use small, even vegetables for canning.

Sterilization of containers
To ensure that canned food lasts as long as possible, it is necessary to sterilize the jars properly:
- Wash glass jars, checking for chips and cracks.
- Use new lids; it is recommended to boil them in water for 10-15 minutes.
- Sterilize with steam over a saucepan for 15 minutes or bake in the oven at 160 degrees until completely dry.
- Pasteurization is often used as an additional step. Filled, unscrewed jars are left in boiling water for 20-30 minutes before sealing. Place a wooden rack or towel on the bottom of the pan. The water should be 1.5-2 centimeters below the lids.

Methods of preparing marinade
There are various ways to prepare marinades for canning. The most commonly used are:
- Pour water into a saucepan and add salt and sugar. Pour into the jars with the cucumbers. After 10-15 minutes, bring to a boil again, add the spices, and pour the remaining mixture into the jars before sealing.
- You can also add all the necessary spices and vegetables to glass jars. Add water and seal immediately.
Important! Each recipe requires that spices not be boiled to preserve maximum aroma and flavor.
Step-by-step preparation of cucumbers
To prepare cucumbers for the winter using the standard recipe with the above-mentioned "Bulgaria is Resting" proportions, follow these steps:
- Soak 1.5 kilograms of cucumbers in cold water for 5 hours.
- Wash and trim the cones.
- Peel 1 onion and 1 carrot. Wash and dry the dill.
- Cut carrots and onions into rings.
- Wash and sterilize the jars.
- Place onions, carrots and dill on the bottom of the container.

- Place the cucumbers tightly.
- Pour purified water into a marinade pot. Add 3 tablespoons of salt and 7 tablespoons of sugar. Bring to a boil on the stove.
- When boiling, add 180 milliliters of 9% vinegar. Stir.
- Pour the marinade into the container with vegetables.
- Roll up the jars. Turn them upside down. Warm them with a towel or blanket.
- Leave to cool.
- Store in a cool, dark place.

Canned with tomatoes
If desired, you can prepare assorted cucumbers and tomatoes in one jar. A 1:1 ratio is more common.

Pickled
For a liter jar you need to use:
- 200 grams of cucumbers;
- 200 grams of tomatoes;
- spices and vinegar for marinade.
The above-mentioned cooking method is used for preparation. Seasonings are added to taste. Horseradish leaves, black peppercorns, and parsley are recommended. The marinade preparation and sterilization method are up to the cook. This does not affect the taste of the finished preserve.

Salty
For pickling you need:
- Prepare the cucumbers, cut off the ends.
- Fill with water for 3-4 hours.
- Chop the dill, currant and horseradish leaves.
- Pour rock salt with water at the rate of 1 tablespoon per 1 liter of water for brine.
- Place cucumbers in containers, lining the bottom of each with spices. Add 3-4 cloves of garlic.
- Leave it in this state for several hours, covered with film.
- Pour in brine.
- Cover the jars with lids to allow air to enter.
- Salt the cucumbers like this for 3-4 days.
- Drain and bring the brine to a boil, pour into jars and roll up.

Methods for storing pickled preparations
The best place to store food for the winter is a cellar that is not exposed to direct sunlight and has cool air.
Apartment dwellers are advised to install shelves on the balcony or in an alcove that can be closed to block out light. The recommended shelf life is 1-2 years.
