Classic recipe for pickling whole fruits
If the fruit is small, it's perfectly suitable for whole-fruit canning. To prepare 4-liter jars, you'll need:
- small peaches - 2 kg;
- water - 2 liters;
- salt - 3 tablespoons;
- sugar - 6 tablespoons;
- vinegar - 100 g (or 1.5 teaspoons of citric acid).
The fruits are placed in jars, filled with marinade and sterilized in a water bath for 15-20 minutes, then rolled up.

Spiced preparation in syrup
This piquant preserve requires cloves. A single clove is inserted into each peach, at the base of the stem. The rest of the process is no different from the classic one.
The marinade recipe changes slightly, and the amount of sugar is doubled.
We prepare tender fruits in their own juice
This preparation requires fruit at varying stages of ripeness. Unripe fruit is sliced, while overripe fruit is used to make peach juice.

The technology is as follows:
- the slices are placed in jars;
- pour in peach juice;
- add to each liter jar: 1 tablespoon of sugar, 1 teaspoon of salt, citric acid on the tip of a knife;
- pasteurization is carried out in a water bath for 25-30 minutes after the water boils;
