Not every homemaker knows about the beneficial properties of chokeberries. These tart berries contain a huge amount of vitamin C and iodine, essential for health. Due to their unusual flavor, they are often overshadowed by more traditional fruits like currants, gooseberries, and strawberries. Therefore, chokeberry jam is traditionally made with cherry leaves or various fruits, which counteract the berry's tart, astringent taste.
The intricacies of making black rowan jam with cherry leaves
To make delicious, healthy jam, follow a strict recipe and be patient. Cooking time is between 2 and 4.5 hours. Otherwise, the flavor may turn out harsh, tart, and bitter.
Selection and preparation of the crop
Chokeberries are harvested from mid- to late October, after the first frosts. Ripe berries are sorted, separated from the stems, washed under running water, and dried.
Note: Slightly freezing the berries improves their flavor, making them sweeter and juicier.

Sterilizing containers for canning
The size of the jars for the preserves is selected based on personal preference and the expected amount of jam. Jars are thoroughly washed in a baking soda solution, rinsed, and sterilized using a convenient method.
Place the lids for sealing the containers in a saucepan and boil for 10-15 minutes.
Recipes and methods for preparing healthy treats
There are many recipes for making chokeberry delicacies, but they are all based on the traditional method of boiling the berries for jam.

Traditional method of harvesting chokeberries
To make jam, you will need:
- Ripe berries – 3 kilograms.
- Granulated sugar – 3600 grams.
- Drinking water – 1500 milliliters.
- Cherry leaves – 300 grams.
Tip! To give the treat a distinctive flavor and aroma, add a teaspoon of vanillin to the jam.
Place the ingredients in a wide bowl, add water, bring to a boil, and simmer over reduced heat for 25-30 minutes. Mix the berries thoroughly and simmer for another 10-15 minutes. Once the time has elapsed, turn off the heat and allow the berries to cool naturally.

Place the cooled cherries back on the heat, add sugar, stir with a wooden spatula, and simmer for another 20-25 minutes, until thickened. Add vanilla 3-4 minutes before the jam is completely done. Once fully cooked, remove the cherry jam.
The hot delicacy is placed into prepared containers and sealed with lids.
A "Riddle" for Winter with a Cherry Leaf
Using a jam recipe called "Riddle," the delicacy acquires a delicate cherry flavor and aroma.
- Black chokeberry berries – 2 kilograms.
- Cherry leaves – 25-30 pieces.
- Drinking water – 2 liters.
- Granulated sugar – 2 kilograms.
Pour water into a wide container, bring to a boil over high heat, and add the cherry leaves. Simmer the water and herbs for 10-15 minutes, then remove the cherry leaves and add sugar.

Place the fruit into the prepared syrup, bring to a boil and cook for 3-5 minutes, then turn off the heat and leave the jam to steep for 10-12 hours.
After the time has elapsed, bring the treat back to a boil and let it cool at room temperature. Once the jam has cooled completely, bring it to a boil and, while still hot, pour it into prepared containers.
With citric acid
To give the preparation a sour taste, citric acid is added to the traditional recipe instead of vanillin.
Assorted apples and chokeberries
Aronia goes well with apples.

To prepare jam you will need:
- Fresh berries – 2000 grams.
- Fruits – 1500 grams.
- Granulated sugar – 2.5 kilograms.
- Drinking water – 1000 milliliters.
- Lemon juice and cinnamon – to taste.
The jam is prepared according to a traditional recipe, but along with the berries, apples cut into slices are placed in the cooking container.
Rules for storing prepared dishes
Store the prepared product in a cool place for 24 months. At room temperature, containers with the treat will keep for up to 12 months.
