I'm looking to add variety to my cellar shelves and stock up on more delicious snacks. Cucumbers and peppers are among the best winter preserves for their aroma, flavor, and nutritional value. There are many ways to preserve food at home without spending a lot of time and effort.
What's so great about pickled cucumbers and bell peppers?
Cucumbers paired with bell peppers are crispy, aromatic, and retain their green color. They have a pleasant, slightly sweet flavor.
Note! These healthy vegetables can be used in a variety of preparations—assorted, salads, and pickled.
Selecting and preparing vegetables
For this preparation, it's recommended to choose small, uniform-sized fruits so they will be evenly salted. The vegetables should be bright green; avoid yellow ones, as they are overripe and will negatively impact the quality of the preserves.
Select peppers of different colors so that they are firm and meaty.

Before you begin cooking, you need to wash the cucumbers, cut off the ends and soak them for 4-5 hours using cold water.
Sterilization of containers
Jars for preserves should be washed and inspected for cracks and other defects. They should then be sterilized using steam or baked in the oven. You can also microwave the jars for 3-5 minutes at 700-800W.
