To ensure a high-quality winter drink, choose fresh, ripe fruit and bottle the juice hot. Avoid boiling the juice for too long to avoid destroying the beneficial nutrients.
Selecting and preparing root vegetables
For juice, use bright orange carrots, which contain more carotene, with a small core, and are fresh and juicy. Wilted carrots are not suitable for juicing. Medium-sized carrots are preferable; too large or small ones are unsuitable. The carrots should be free from damage and rot.
Suitable varieties include Artek, Baltimore, and Emperor. Peel with a vegetable peeler to remove a thin layer.
We use Antonovka, Grushevka, Golden, and Fuji apples, picked fresh from the tree and free of pests. The apples are washed, cored, and left unpeeled. Rinse fruits and vegetables thoroughly under running water and pat dry with a towel to remove excess moisture.

For winter canning, you'll need 0.5- or 1-liter glass jars. Wide-mouth bottles with screw-on lids are also suitable. Wash the jars thoroughly with baking soda and rinse several times with water. Then sterilize them over steam, in the microwave, or in the oven. Boil the lids for 5 minutes.

There are several ways to prepare this vitamin-rich juice, and it can be combined with other vegetables. Lemon juice and ginger can also be added to the drink for flavor.

Through a juicer
You can make carrot and apple juice using the following ingredients:
- apples - 1.5 kg;
- carrots - 5 kg;
- sugar - to taste.
Juice the apples using a juicer. Peel and wash the carrots, then juice them, let them sit for 40 minutes, then strain through a sieve, then through a double layer of cheesecloth to remove any remaining pulp.
Mix the two types of juice in equal proportions. If it's sour, add sugar (150 g for every two liters of mixture) and place the pan on the stove. Bring the drink to 95°C, simmer for 5 minutes, and skim off any foam that forms.

Pour into hot, dry jars. For long-term storage, pasteurize at 85°C (185°F): 15 minutes for 0.5 l; 20 minutes for 1 l. Roll up, turn over, wrap in a warm blanket, and leave for 24 hours. Then store.
With pulp, through a meat grinder
If you don't have the necessary kitchen equipment at home, you can use a meat grinder. This process is labor-intensive and will require a significant amount of time and effort. Ingredients:
- vegetables - 2 kg;
- apples - 1 kg;
- sugar - 2 tbsp;
- lemon.
Grind the prepared vegetables, strain through two layers of cheesecloth, and discard the pulp. Don't throw it away; you can use it in stewing vegetables. Do the same with the apples. Then combine the drinks, adding sugar and lemon to taste.
The amount of sugar depends on the sweetness of the resulting drink. It may be more or less. If the drink is too thick, you can add water. Bring the mixture to a boil and simmer for 5 minutes. Pour into sterile containers, seal, turn upside down, and wrap.
Carrot juice in a juice cooker
If you have a juicer, making this drink is very easy. You'll need:
- carrots - 3 kg;
- apples - 3 kg;
- sugar - 200 g.
Slice the fruit, not too finely, and slice the vegetables. Place them in a container for the fruit, alternating layers, and sprinkle with sugar. Pour water into a suitable container. Place the assembly on the stove, and insert the hose into the prepared container. Cook until the juices form, an hour or more. Boil the finished drink and seal it.

Shelf life and storage conditions for winter preserves
Store the juice for 6-8 months in a cellar or pantry at a temperature of 0…+20 C. Avoid exposure to sunlight and freezing temperatures. Humidity should ideally remain below 80%.
Once opened, the drink should be consumed within 24 hours.
