Pickled or marinated plums are a great addition to a side dish. They pair well with meat and poultry dishes. In the East, it's common to dry, salt, marinate, and even cure fruits, slightly altering their flavor. Plum marinade is also used; it has a pleasant sweet and sour flavor and can be used as a sauce.
Taste characteristics of pickled plums
Let's talk about how pickled plums differ from other products:
- In winter, this product will help diversify your usual dishes.
- Pickling gives fruits a special aroma and deprives them of their usual sweetness.
- These plums taste more sour than sweet, but it is a pleasant sourness.
- Pickling helps to give a familiar, sweet product a different taste, and use it as a snack, rather than as an addition to tea.

Preparatory stage
To prepare a snack for the winter, you will have to select the fruits and prepare special containers for preservation.
Selecting and preparing plums
To prevent pickled plums from becoming too sweet and from losing their shape and consistency during cooking, choose them wisely:
- Choose unripe fruits so that they don’t lose their shape during the pickling process, but don’t choose green fruits; preference is given to those that have not reached full ripeness;
- the fruits are washed under running water and peeled, divided into halves, removing the pits (if the recipe requires it);
- The fruits must be fresh, without signs of rot or mold; they should not be picked from trees infested with aphids or other pests.

Sterilization of containers
The containers will first need to be washed under running water using baking soda, then the jars are treated as follows:
- The container is turned upside down to allow the remaining water to drain.
- Then they inspect it for cracks, chips, and damage.
- The jars are sterilized over steam for 5-7 minutes.
Duration and storage conditions of winter preparations
Much depends on the recipe; if the marinade contains vinegar, the product can be stored for 1-2 years.
If there is no vinegar and the product has not been heat treated, then it should be stored in the refrigerator for no longer than 14 days.
Heat treatment extends the shelf life, but does not exceed 12 months if the recipe does not contain preservatives.
