Subtleties of cooking
Gooseberry jam has long been prized by people. Making it requires a minimal amount of ingredients and proper instructions.

To prepare a healthy and tasty dish, it is recommended to adhere to the following rules:
- First, pick the gooseberries from the bush. For jam, the variety isn't particularly important. To obtain a delicious product with emerald "notes," choose slightly unripe (green) fruits.
- For one kilogram of gooseberries, use about one hundred and fifty milligrams of water and the same amount of sugar. Various nuts (walnuts, peanuts, and others) are used in making jam.
- To enhance the taste, it is recommended to place nuts inside the berries. (stuff). This will make the final product taste much better.
Preparing the main ingredients
Before adding the nuts to the main ingredient (red or green gooseberries), they should be lightly peeled (removing any small debris) and prepared for further use. If using walnuts, it's best to chop them finely so that most of the nuts can fit into the gooseberries.

The next step is filling the half-empty fruits with nuts. Different varieties are used for this preparation. Red berries are usually used, but for emerald jam requires green gooseberriesThe ends are cut off.
The pulp is removed with a pin or other suitable object, and then placed in a wide container (saucepan). If you try to gently squeeze out the inside, nothing will come of it; the berries will simply burst.
Ingredients required:
- one kilogram of granulated sugar;
- alcohol (vodka, forty milligrams);
- lemon (half or whole);
- vanilla;
- gooseberries (one kilogram);
- one hundred grams of cherry leaves;
- one hundred and seventy grams of peanuts.
Tsar's gooseberry jam with nuts
Remove the seeds and 2/3 of the pulp from the berries, then rinse thoroughly. Wait until the berries are dry and add the peanuts (lightly roasting them is recommended for a more flavorful taste).
Prepared gooseberries and nuts are placed in layers in a pre-prepared jar, and cherries with lemon slices are placed between them.
Next, fill the pan with hot water (preferably boiling water) and let it steep for a while. After a few hours, pour the resulting liquid into a container with the gooseberry pulp and add vodka and vanilla. After this, prepare a syrup and add the gooseberries, with the nuts inside, without the cherry leaves. Cook for five minutes.

The gooseberries should be translucent. The resulting mixture is placed in jars in layers, with cherry leaves and lemon slices placed between each layer. The result is a delicious and healthy "Royal" treat that will please both adults and children.
Gooseberry jam with walnuts and cardamom
To prepare this jam, you will need the following ingredients:
- granulated sugar (one and a half kilograms);
- cardamom (ground);
- gooseberries (unripe green);
- half a liter of water;
- forty grams of walnuts.

First, crack the nuts, remove the shells, and break them into small pieces. Wash the berries thoroughly and carefully remove the stems (without breaking them). Remove the insides by hand (gently using your fingers is not recommended) or with a pin or hairpin. Rinse the drained gooseberries again (a colander is suitable for this). This is done to remove any remaining seeds.
The next step is to stuff the fruit with nuts. This is done while the pulp is cooking. If the gooseberries are very large, it's recommended to stuff them with only half a nut.
After half an hour, strain the resulting solution (decoction), then discard half. The recipe calls for one liter of liquid for the jam (more is not necessary). Add granulated sugar to the remaining decoction and bring to a boil (first on high heat, then finally on low heat). The result is a sweet syrup.

Pour the resulting decoction over the gooseberries stuffed with walnuts and let it steep for several hours (preferably overnight). After 8-12 hours, add ground cardamom to the jam, place the pan over low heat, and simmer for 3-6 minutes.
Expiration date of jam
To preserve jam for the winter, it is recommended to strictly follow the preparation and storage conditions. The product can be stored for up to 3-4 years (subject to compliance with the necessary recommendations). The older the jam, the less useful substances it contains.
