The specifics of making gooseberry jam for the winter
Experienced cooks know the rules that help create a high-quality preparation.
- Add the same amount of granulated sugar as the weight of the fruit and berry component.
- The foam that rises to the top during cooking is removed.
- Only bottled water is added to the dish.
The finished product is poured hot into prepared containers and sealed with lids soaked in boiling water. Only after it has cooled completely is it stored permanently.

Selection and preparation of products
To prepare this delicacy, select ripe, but not bruised, berries. They are sorted, leaves and debris are removed, washed under running water, and laid out on a clean cloth. Once the berries are dry, the stems and stalks are trimmed off each one with scissors. Sometimes, various fruits, nuts, and even leaves are added to the jam. These ingredients are thoroughly washed, and the fruit is peeled and pitted.
Rules for preparing containers
The containers for storing the finished dish also need to be properly prepared. Small glass jars should be washed with soapy water and rinsed under running water. After they're dry, sterilize them using any convenient method.

How to cook gooseberry jam: recipes
There are several recipes for making desserts using only gooseberries and adding other ingredients.
A simple recipe
Regular jam, made the traditional way, is thick. Gooseberries are sprinkled with granulated sugar, water is added, and the jam is simmered for 45 minutes.
Orange and lemon option
Making a citrus dessert is quick and easy. Blend gooseberries, lemons, and oranges in a blender. Combine the mixture with sugar and simmer for half an hour.

Five minutes
This sweet treat is quick to make. First, cover green gooseberries with granulated sugar and let them sit overnight. In the morning, add water, bring to a boil, and let cool. Then return to the heat, simmer for 5 minutes, and pour into a container. The jam is delicious.
Thick jam with whole berries
You can make a thick preserve from whole gooseberries. Take a packet of Zhelfix and dilute it according to the instructions. Place the large green gooseberries in an enamel saucepan and pour the Zhelfix over them. Add granulated sugar and 2-3 cinnamon sticks, and bring to a boil.

"Tsar's" or emerald jam
This royal recipe turns out translucent and emerald-colored. However, it takes a long time to prepare. Each berry is pierced with a toothpick to prevent them from shriveling from the heat. Then the gooseberries are covered with hot sugar syrup and left for 5-6 hours. After cooling, the liquid is drained, boiled for 10 minutes, and poured over the berries again. This process is repeated two more times.
From green gooseberries through a meat grinder
To prepare the following dessert, take the ingredients in the following proportions.
- gooseberries – 1 kilogram;
- granulated sugar – 1 kilogram;
- Zhelfix - 1 pack.
Green, slightly unripe berries are ground in a meat grinder, mixed with sugar diluted with Zhelfix, and boiled for half an hour.

Royal recipe with walnuts
This imperial delicacy takes a long time to prepare, but it yields a piquant flavor. First, the seeds are removed from each berry, and a piece of walnut is placed inside. The scooped-out pulp, along with the seeds, is covered with water and boiled for 10 minutes. The cooled mixture is strained through a sieve, white sugar, and the stuffed gooseberries are added. Bring the mixture to a boil and leave at room temperature overnight. In the morning, the dish is simmered for 40 minutes.
Recipe for a multicooker
The best way to create this amazing treat is to cook it in a slow cooker. Just remember not to fill the bowl more than halfway with ingredients. The dessert expands during cooking, and it could spill out.
Add sugar and water to the gooseberries. Select the "Stewing" function. After the timer beeps, leave the jam in the closed appliance until it cools completely.
Red gooseberry with cherry leaves
To prepare this concoction, take ripe red cherry fruits. Place them in an enamel saucepan along with cherry leaves, pour hot sugar syrup over them, bring to a boil, and simmer for 5 hours. Then, simmer the mixture for half an hour.
With lemon without cooking
This uncooked treat preserves a huge amount of vitamins, but it should only be stored in the refrigerator for up to three weeks. Gooseberries and lemons are minced together. The mixture is mixed with sugar.

Diet, with orange and kiwi, no sugar
Dilute the pectin as directed. Grind the gooseberries, oranges, and kiwi through a meat grinder. Add the pectin and cook for 20 minutes. Add a few sprigs of peppermint 5 minutes before the end of the process.
Fructose jam
Mix fructose with water and boil for 5 minutes. Add berries and simmer for half an hour.

On stevia
Stevia is a new, low-calorie sweetener. Diabetics and those watching their weight should make jam with it.
Gooseberries are covered with water containing stevia and pectin. The mixture is brought to a boil. After cooling, it is simmered for 20 minutes.

Further storage of blanks
Desserts should be stored on the bottom shelf of the refrigerator or in the cellar for no more than 1-1.5 years. The main thing is to keep them from freezing and out of direct sunlight.
Gooseberry jam makes the perfect dessert for morning tea. It can also be used as a sweet filling for homemade baked goods.
