There are countless recipes for preparing raspberries with sugar without cooking for the winter. The beauty of these recipes is that the dessert always turns out delicious. During flu and acute respiratory viral infection epidemics, this preserve is an excellent preventative measure against colds.
Preparing berries and containers
To obtain a delicacy that does not ferment quickly, high-quality ingredients are used and the container is carefully prepared.
The fruits are selected fresh, without signs of rot. Raspberries are the main ingredient in the dish. They are first sorted. Any bruised or bruised fruits are separated. These are then added to the crushed berries. Leaves and stems are removed.

Then, rinse the whole berries under running water and place them in a basin of salted water (0.5 tablespoons of extra salt per 1 liter of water). Any insects inside the berries will float to the surface. All that remains is to pour out the dirty water. Place the berries in a colander until completely dry. Follow the same procedure with other berries, but do not soak them in salt water.
The mixture is stored in small glass jars. They are first washed, dried, and then sterilized. To do this, the jars are placed in an enamel bowl filled with water. This is placed on the stove and heated for at least 40 minutes.

To ensure a high-quality preparation, you need to calculate the proportions correctly. If raspberries are combined with other fruits, both ingredients are used in equal parts. Granulated sugar and berry mixture are used in a 2:1 ratio.

There are many recipes for making this preserve. You can make the dessert with just raspberries or with other fruits. Either way, the treat turns out delicious. But it's important to follow these simple rules:
- To create this delicious dish, use a large enameled dish without chips.
- If you leave the berries with granulated sugar for several hours, you should stir them periodically to help the sweet crystals dissolve faster.
- The finished product is immediately poured into pasteurized containers. They are sealed with steam-treated tin lids using a special sealing machine. Only after all these steps are the jars stored permanently.
The traditional way
You can make this delicious treat the traditional way, known to our grandmothers. The main ingredient is pounded with a wooden pestle, sprinkled with granulated sugar, and left at room temperature for 3-4 hours. During this time, the sugar crystals will dissolve. Then, the candied mixture is placed in jars.

Raspberries can be candied with blackcurrants. Both berries are blended, sweetened, and then bottled for storage after a couple of hours.
Method of preparation without cooking in the freezer
Raspberries are frozen to preserve as many nutrients as possible. Small portions of the main ingredient are placed in unused plastic bags. White sugar is sprinkled on top. The bag is shaken to distribute the crystals throughout the berries and then tied. Then all the bags are placed in the freezer. The frozen berries will keep for up to six months.

The raspberries are put through a meat grinder and placed under a layer of cheesecloth. The seeds are removed. Sugar and citric acid are added to the grated berries. The product is ready! The remaining berry mixture can be used to make jelly or compote.
Raspberry pastila
Making pastila is difficult, but the results are simply stunning. Grind the main ingredient using any convenient method, strain it through a sieve, and then sweeten. Line a baking sheet with parchment paper. Pour the raspberry puree over the surface, spreading it evenly.
Place the container in the oven and bake for 5-6 hours at 50-70°C. When the pastila no longer sticks to your fingers, remove the baking sheet. Peel the pastila from the parchment paper, cut into pieces of the desired size, place them in a plastic container, and refrigerate.
The dessert is not stored for long and is eaten within a couple of weeks.

Whole berry in sugar
Layer red berries and granulated sugar in a jar. Top with a couple of tablespoons of vodka. This treat is used as a cold remedy every other week. It's best not to give it to children, as it contains alcohol.
Raspberry "Five Minutes"
First, puree the raspberries in a blender and combine with cane sugar. Bring the mixture to a boil and simmer for 5 minutes. If done correctly, this mixture will keep for about a year.

The main ingredient is ground in a blender, then white and vanilla sugar and freshly squeezed lemon juice are added. The blended berries acquire a unique flavor.
