Selecting and preparing berries
For jam, you need ripe, but not overripe, red gooseberries - beautiful, with a firm texture and uniform color, not too small in size, without signs of rot or damage.
All fruits must be carefully sorted to eliminate any defective ones. Afterwards, carefully remove the stems and stalks using special kitchen tweezers or manicure scissors.
At the end of the preparatory process, all the berries need to be washed in a colander and dried by placing them on a paper towel.

Preparing the container
It is recommended to use medium sized glass jars. First, you need to wash them with a solution of laundry soap or rub them with baking soda, and then rinse them with running water. After this, be sure to sterilize using any convenient method:
- in the oven;
- in a saucepan filled with boiling water;
- over steam;
- in the microwave.
Recipes for delicious red gooseberry jam
Red gooseberries are the perfect berry for making delicious jam for the winter. Besides the classic recipe, there are many interesting variations.

The classic way
To make classic jam, you will need the following ingredients:
- a kilogram of red gooseberries and sugar;
- half a glass of water.
The process is very simple. Just follow these steps:
- Place the berries in a saucepan of suitable size.
- Fill with water.
- Bring to a boil and continue cooking for ten minutes.
- Add sugar and stir until it dissolves.
- Cook at low heat for about thirty minutes.
- Remove the pan with the berry mixture from the heat and wait until it cools.
- Bring to a boil again and keep on the fire for another quarter of an hour.
- After it has cooled completely, bring it back to a boil and cook for ten minutes.
- Place into pre-sterilized jars.

Whole berries in syrup
This recipe is the longest and most labor-intensive, but the jam will turn out excellent.
You need to prepare:
- 1 kg of red gooseberries;
- 900 g granulated sugar;
- 500 ml of water.
Each berry should be pierced in three to five places beforehand. This will prevent them from bursting during cooking.
The next steps are as follows:
- Mix water with sugar and bring to a boil, stirring constantly.
- Place the berries in the prepared hot syrup and leave for five hours to soak them in the sweetness.
- Pour the syrup mixed with gooseberry juice into a separate bowl.
- Bring it back to a boil, then add the berries and let it simmer for another five hours. Repeat this process one more time.
- At the final stage, boil the gooseberries, covered with hot syrup, for ten minutes.
- Distribute into sterile jars and seal with airtight lids.

Five-Minute Recipe
The next option, on the other hand, will save you time. To make simple jam, you'll need the following ingredients:
- 600 g ripe berries;
- 500 g sugar;
- 100 ml of water (filtered or still mineral).
Place the berries in a large saucepan and sprinkle with about half of the prepared sugar. Cook over low heat until the sugar dissolves. Pour in the water and bring the mixture to a boil. Add the remaining granulated sugar and continue simmering for five minutes. While hot, place in jars and seal tightly.

With added cherries
Cherries and gooseberries complement each other perfectly, so this combination is used to make jam.
You will need:
- half a kilo of cherries and red gooseberries;
- 800 g granulated sugar;
- 150-200 ml of water;
- a few cherry leaves.
To cook it correctly, you need to:
- Remove stems from the cherries.
- Pierce all the berries several times with a needle to prevent them from cracking during cooking.
- Wash the cherry leaves and place them on the bottom of the pan.
- Place gooseberries, cherries and cherry leaves in alternating layers in a saucepan.
- In a separate saucepan, dissolve 400 g of sugar in water and cook the syrup.
- Pour hot syrup over the berries for 4-5 hours to soak.
- Cook over medium heat for 5 minutes from the moment it boils and add the remaining sugar.
- There is no need to stir the jam to avoid crushing the berries.
- Continue cooking for three more stages, each time leaving the jam to steep for 4-5 hours.
- When the syrup becomes thick enough, pour the jam into jars and roll up.

With cherry and currant leaves
Adding cherry and currant leaves will make the taste of gooseberry jam more refined.
Ingredients required:
- 1 kg red gooseberries;
- 3 currant and cherry leaves;
- 800 g sugar;
- 500 ml of water.
Place the washed, aromatic leaves in the bottom of a shallow saucepan. Sprinkle the berries and sugar on top. Let it steep for about half an hour. Add water and let it steep for five hours. Pour the liquid, soaked in the leaves and berry juice, into a separate saucepan and bring to a boil. Then, simmer for five minutes. Pour the hot syrup over the berries for three hours. Then drain the syrup again and bring it back to a boil. Repeat this process four times, then package the finished jam into sterilized jars.

A fragrant treat with oranges
This jam is a delicious source of ascorbic acid. To make it, you'll need:
- 1 kg ripe red gooseberries;
- 800-900 g sugar;
- 2 oranges.
Cooking process:
- Wash the orange thoroughly and keep it in boiling water for one minute.
- Without peeling, cut into equal sized slices.
- Remove the seeds.
- Pass the gooseberries and orange slices through a meat grinder.
- Sprinkle the berry-citrus mixture with sugar and place in a saucepan.
- Place over medium heat and cook for ten minutes, stirring constantly.
- Distribute into sterilized jars and roll up the lids.

With lemon
For this recipe you will need:
- a kilogram of gooseberries and sugar;
- 1 lemon.
Wash the lemon, peel it, remove the seeds, and then cut into slices or wedges. Grind the lemon and gooseberries in a blender or meat grinder. Place in a saucepan and sprinkle with sugar. Let steep for an hour. Place over medium heat, bring to a boil, and simmer for 15 minutes. Once hot, transfer to containers.
Gooseberry jam
To prepare vitamin jam, you will need:
- 1 kg of red gooseberries;
- 700 g sugar;
- 100 ml of water.
The process includes the following steps:
- Place the berries in a saucepan and cover with water.
- Place on the stove, bring to a boil and reduce heat.
- Simmer over low heat for 20 minutes.
- Cool the berry mixture and grind it (using a blender or meat grinder).
- Pour in the sugar and return to the stove.
- Cook on low heat until thickened, stirring constantly.
- Place the hot jam into jars and roll up.

With strawberries
To use this recipe you will need:
- half a kilo of ripe gooseberries and strawberries;
- half a glass of sugar;
- a few drops of lime juice;
- 2 teaspoons vanilla sugar.
First, wash the strawberries and remove the stems. If the berries are large, cut them into several pieces. Remove the stems and stems from the gooseberries, rinse, and dry. Place all the berries in a saucepan and cover with a mixture of regular and vanilla sugar. Stir and bring to a boil for three hours, stirring constantly and skimming off any foam. Pour the thick, hot jam into sterilized jars and seal.

With walnuts

Fructose jam
Gooseberry jam made with fructose is beneficial for diabetics. To make it, you need:
- 1 kg of berries;
- 700 g fructose;
- 500 ml of water.
Mix water and fructose to make a syrup. Add a little gelatin to thicken. Bring to a boil and cook for 3 minutes, stirring. Place the berries in the syrup and cook for 10 minutes. Arrange in jars and seal.
Duration and storage conditions of winter preparations
Jam made according to the traditional recipe can be stored for 2-3 years in a basement, cellar or pantry. Desserts without heat treatment should be stored in the refrigerator. The deadline is 1 year.
