      Perhaps you're taking the term "don't overcook" too literally. Breeders have learned to develop varieties with different shapes, frost resistance, and early maturity. But the characteristics of the potato product are a bit more complicated. Try cooking over low heat. There are some subtleties here, too. You're unlikely to find a variety that "doesn't overcook at all."
